When I first arrived in Spain, every time I went to a restaurant with friends, the hams on the menu left me completely confused. Terms like Serrano, Ibérico, Bellota, Cebo… felt like a tricky puzzle. How to distinguish different types of ham?
You should know that Spanish ham is mainly divided into two types: Serrano ham and Iberian ham. The former is made from ordinary white pigs, affordable, and a great choice for casual drinking or tapas. The latter is made from precious Iberian black-hoofed pigs, the “Rolls-Royce” of hams. Among Iberian hams, the highest grade is called Jamón Ibérico de Bellota, from acorn-fed pigs, rich in marbling, with a unique nutty aroma, and naturally the most expensive. Simply put, you can roughly tell by the price; the price difference is huge!

How to order?
On restaurant menus, you usually see Ración and Media Ración. If you want to taste ham with just two or three people, ordering a Media Ración is enough. When ordering, if you want the best, you can directly say “Quiero una ración de Jamón Ibérico de Bellota, por favor.” Of course, if budget is limited, a Jamón Ibérico de Cebo is also an excellent, cost-effective choice. Don’t hesitate to ask the waiter: “Which ham is the best here?” They’ll usually be happy to recommend it.
A good hand-sliced ham is thin as cicada wings, each slice showing perfect marbling. When tasting, don’t rush to pair it with bread; first, take a slice and warm it slightly in your hand to release the aroma of the fat, then put it in your mouth. You will experience the salty flavor and unique nutty taste melting instantly—a true delight.
