Hello neighbors! When I first arrived in Spain, like many others, I was totally lost seeing row after row of hanging hams in the supermarket. Serrano, Ibérico, Cebo, Bellota… what do all these mean? After falling into many traps paying a lot of tuition fees, today I want to share my tips for choosing ham, hoping to help newcomers!
We need to understand the two main categories: Serrano ham and Ibérico ham. Simply put, Serrano comes from ordinary white pigs, is produced in large quantities, affordable, and a staple on Spanish tables. Ibérico comes from the precious Iberian black-hoofed pig, has limited production, is pricier, and offers more complex, rich flavors; it’s a luxury delicacy.
How to distinguish the grades of Ibérico ham?

Ibérico ham itself is graded, and the easiest way to tell is by the color of the plastic tag hanging on the leg. This is a legal standard and very clear:
| Tag Color | Spanish Name | Meaning |
| White | Cebo | Grain-fed |
| Green | Cebo de Campo | Grain + free-range |
| Red | Bellota Ibérico | Acorn + grain |
| Black | 100% Ibérico de Bellota | 100% purebred black pig fed on acorns |
If you see the black tag, that indicates the highest grade “acorn ham”, which is naturally the most expensive. Spanish ham street food but the melt-in-your-mouth fat and nutty aroma are an unforgettable experience for life!
My personal buying advice
If Spanish ham food pairings are just for everyday eating, like in sandwiches or with melon, pre-sliced Serrano from the supermarket is perfectly enough and offers great value. To try Ibérico flavors, start from Cebo level with white or green tags; many supermarkets like Mercadona and Carrefour have their own brands with stable quality. If you have visitors or are celebrating a special occasion, go for the good stuff—the red or black tag Bellota will definitely impress!
The world of ham caters to all budgets. You don’t need to start with the most expensive; begin with basics and gradually find the flavors you like best. What brands or types of ham do you usually buy? Feel free to leave comments below and share your recommendations!
