For this pizza, the most important ingredient is definitely the ham! I recommend using Jamón Serrano, and if your Spanish ham pizza budget allows, Ibérico ham will make it even more luxurious. You can make the dough yourself with fermentation or, like me, buy ready-made pizza dough from the supermarket to save time and effort. For cheese, I suggest mozzarella for the best melting and stretch effect.

- Preheat the oven to 220°C. Line a baking tray with parchment paper and roll out the pizza dough into your preferred shape and thickness.
- Use a fork to poke small holes in the base to prevent bubbles during baking. Then spread a layer of tomato sauce evenly, leaving about a 1cm border around the edges.
- Generously sprinkle grated mozzarella cheese—the more, the better!
- Place the pizza in the preheated oven on the middle rack and bake at 220°C for about 10-15 minutes until the crust is golden, and the cheese is melted and bubbling.
- Here’s the most crucial step! Once the pizza comes out of the oven, add the Jamón Serrano slices and fresh arugula on top. The saltiness and fat of the ham will slightly melt from the pizza’s heat but keep its tender texture intact—this is the essence! Never put the ham in the oven to bake together as it will dry out and become tough, which wastes the quality.
