When eating paella in Valencia, you’ll discover that many restaurants stick to traditional methods. Authentic valenciana paella originally featured rabbit and chicken, but nowadays the seafood version is more popular with tourists. Traditional preparation uses bomba rice, a short-grain variety with excellent water absorption that perfectly captures the seafood flavors. Modern restaurants build on tradition by adding more seafood varieties like lobster and scallops.

I especially recommend La Pepica restaurant - while mid-priced, both the seafood freshness and traditional flavors are excellent. Legend has it that Hemingway also enjoyed Valencia paella here!
Ordering Tips
There are several important things to remember when ordering paella in Valencia. First, never order a single portion - paella is always prepared for a minimum of two people. Second, authentic paella takes at least 20 minutes to prepare, so if a Valencia paella restaurant serves it in 5 minutes, it’s definitely not authentic. Finally, always ask your server about the day’s fresh seafood - this makes for a much more flavorful paella.
Dining Experience Highlights
My most memorable meal was at a small restaurant by Lake Albufera. They cook their rice using a mixture of lake and sea water, creating incredibly complex flavors. Though it’s a bit out of the way, it’s absolutely worth the special trip. The restaurant owner personally explains the source of each type of seafood - you can really feel the care and attention.
Valencia’s paella truly lives up to its reputation. I recommend trying at least 2-3 different restaurants to experience various paella styles. Remember to make reservations in advance, especially on weekends, as many excellent restaurants have waiting lists!
